During the harvest season, there’s a rich variety of foods available. As usual, our cooking class will focus on what vegetables and fruits are currently available at the farmers’ markets. This time, freshly roasted peppers, tomatoes, corn, squashes, and more will come together for a beautiful “Three Sisters Pozole,” complete with a variety of toppings including a very special cabbage combo. Special seasonal fruity desserts round out the meal. If there’s time, we will also make a lovely, simple “Ratatouille.”

Everything will be gluten-free, soy-free, and sugar-free.

One dish will be prepared with nuts, all with a little dairy, but the recipes can easily be made at home without dairy or nuts for an allergen free vegetarian feast. Please join us for a lively class!

Cynthia Gran, MA, E-RYT 500, YACEP, DAy began studying yoga in 1978 at the Himalayan Institute of Glenview. She has endeavored toserve the Himalayan Tradition ever since. During the 1980s, she was a resident and served in several teaching capacities. In the 1990-2010s, along with husband, Gary, they operated the Evanston School of Yoga and the Annapurna Herb Shop. She worked as a vegetarian chef, taught special education, and published articles on ayurveda, yoga and meditation.

Simone De Los Santos is the current resident Ashramite at TMC. Her path is creative and spiritual.

As a youth she spent time in Chicago and Puerto Rico nourished by the rich cultural heritage of both worlds. She moved to Minneapolis and earned a degree in Fine Art, specializing in color and abstract painting. During her college career, a color consulting practice was born and she has worked on many historical buildings throughout the Twin Cities.

All the while, processing her world through writing daily has remained the gem of her work. Through decades of practicing yoga, meditation, prayer, seasonal ayurvedic cleanses and diet, and writing practice she has transformed the darkness of human challenges into peace, spaciousness, awareness, growth, and freedom
